2 tbsp olive oil
Approximately 1 glass of water
Flour (as much as it absorbs)
2 kg of greens (spinach, wild greens)
1 little bunch of fresh spring onions cut into thin slices
Mint, fennel, parsley, salt, pepper, cumin
We wash the greens, we press the water out of them and cut them in small pieces. Then we boil them. We pour a bit of olive oil in a saucepan and we chop the spring onions and the herbs and brown them until they shrivel up. We prepare the dough with all the ingredients and we roll a thin pastry sheet out. We add a spoonful of stuffing in each piece of pastry sheet and wrap them up, then fry them in hot oil until they brown.
