Asparagus with eggs (‘Sfougato’)



(for 2 to 3 people)
Ingredients
2 small bunches of asparagus
4 to 5 eggs
A little bit of olive oil
 
Method
We bake the asparagus in a frying pan with a bit of olive oil until they shrivel. We add a bit of water to help them bake well. We whisk the eggs with the salt and pepper and pour them in the frying pan with the asparagus and mix them until they bake. This dish goes well with a green sauce.
