PIES FROM SFAKIA (Sfakianes)  
(approximately 15 pieces)

INGREDIENTS
For the dough:
½ kg of flour
Salt
2 tbsp olive oil
1 ½ teacup of tepid water
Lemon juice (one lemon)
1 tbsp of butter

For the filling:
1 kg mizithra (Greek skim-milk cheese)
3 tbsp flour

Honey*

METHOD
We put in a bowl the ingredients of dough-making, except for flour. We mix them well with bare hands and start pouring a little bit of flour, so as to keep the dough soft. We cover the dough and leave it for 30 minutes. We mix the mizithra with the flour. We split the dough into pieces and roll them in the shape of small balls (the size of a mushroom). We spread each pastry ball with our hands and in the middle of each one we place a piece of mizithra (again in the shape of a tiny ball). We enclose the mizithra in the pastry sheet and press it softly from all sides with our fingers. We sprinkle flour on each new pastry ball and turn them all into long pieces with the help of a rolling pin –this must be done softly. We add some butter in a nonstick frying pan, we warm it up and then bake the pastry pieces from both sides. We serve them hot with honey.
